Unbelievable Vegan Meatballs

Man I made the best vegan meatballs I have made yet last night!  I was so psyched.  “Why are you making meatballs, or even considering the concept of meatballs,  when you don’t  eat much meat?” you may be asking me. Sometimes you are just not in the mood for meat and sometimes you can’t have it because you gave it up for a while or a few days for whatever the reason and at those times when pasta and meatballs are on the menu you need options, right? Last night was one of those nights.

My daughter is home on spring break and both she and my son wanted pasta and meatballs.  The kicker was he eats meat ALL the time (a growing 13 year old) but she GAVE UP meat for Lent!  No real problem actually except for the fact that I had yet to find a vegan “meatball” recipe that I even liked.  I have tried them all and the bean ones were ok but mushy on the insides.

Off to the internet I go and search using this as my search phrase “the best vegan meatballs”.  Gotta work, right?  It did, coming up with a few sites so I started checking them out.  I wanted a recipe that was easy to do and didn’t need all these wacko ingredients.  Found it on this neat blog called  I looked all around her blog and if you need some great recipes for meatless things like burger and meatballs, to name a few, this is the place to go.

These are NOT gluten free but have some great things in them like spinach and nutritional yeast.  Easy to pull together too.  I used 3 grain tempeh for mine and before I use tempeh in ANY recipe I always boil it for 10 minutes before proceeding with the recipe.  This removes any bitterness in the tempeh.  I let it cool complete and it crumbled perfectly.  As you knead the ingredients together you will notice that it really starts sticking together just like when you make seitan (another vegan protein).  It was amazing.   I omitted the fennel and the hot pepper flakes as those are not flavors I like.  You can add other flavors to this recipe to suit your taste buds.  They also hold up to being simmered in the sauce and were not mushy at all!!  Give it a try – I think you will be pleasantly surprised by the results.

Next on my list to try are her “burgers”.  If they are anything like these meatballs I am going to be in heaven!!
