Chocolate Overnight Oats with Chia and Coconut

I have always liked the idea of overnight oats.  Totally love the taste of raw old fashioned rolled oats.  But I was always a little unhappy that the end result was a little too thin for me, just not “hearty” enough to have for breakfast alone (the recipes that used Greek yogurt in them were thicker but I just did not like the taste that the yogurt brought to the table).  I kept looking at recipes and trying them out and finally decided that I would mix a little of this recipe and that recipe and see what happened.  That’s how Chocolate Overnight Oats with Chia and Coconut came about and I couldn’t be happier.  Finally I can now have a healthy, hearty breakfast packed with fiber, protein and nutrients with absolutely no cooking!!!

2 tablespoons chia seeds

¼ cup rolled oats

¾ cup unsweetened milk alternative (I like to use cashew milk)

½ tablespoon unsweetened coconut flakes

½ tablespoon agave nectar

1 ½ tablespoons unsweetened cocoa powder (I like to use Dutch Processed cocoa powder

Throw all ingredients into a jar with a tight fitting lid.  Stir with a spoon, cover jar with the lid and shake vigorously.  Place in the fridge overnight and you have a delicious, chocolately, thick oatmeal ready for breakfast when you get up!  ENJOY!!!
