Oil Free Roasted Veggies

Made roasted rainbow veggies yesterday without oil!! It was easy!!

Preheat oven to 400 degrees F.

Cut up at least 1 2/3 cups of the veggies of your choice - here I used (from left to right) red peppers, cauliflower, broccoli, red onions, carrots, zucchini and yellow peppers.

Line them up on a rimmed baking sheet.

Sprinkle 1 tablespoon of thyme (or other herbs of your choice) over it all.

Drizzle with balsamic vinegar to taste (I LOVE balsamic vinegar, so I put LOTS on - next time I’m going to use this fantastic Blackberry Ginger Balsamic vinegar from Tavern on the Green - I think that would give it neat flavor).

Roast for 25 - 30 minutes. Enjoy as a side dish or over brown rice or pasta as a main meal with a nice kale salad on the side!! ENJOY!!!
